The avocado is the fruit of the avocado tree (family Lauraceae), a plant native to Mexico and some regions of South America, also cultivated in the Canary Islands and Madeira Island. The fruit was already cultivated before the Spanish colonization, being called *ahuacatl* by the Aztecs, a word meaning testicle, an analogy to the avocado's shape. The avocado tree can reach 15 to 20 meters in height and is quite common in most of Brazil. Its harvest season runs from February to August. The fruit has a pear-shaped form, with a dark green or reddish skin, depending on the species. In fact, there are more than 500 varieties of avocados, originating from three different regions: Guatemalan, Antillean, and Mexican. The fruit has a large seed covered by an edible yellowish pulp.
